About me: In 1974, upon returning home from a POW camp in Vietnam, Brian Katz decided to visit Tijuana for a little R&R. Drunk on Tequila worms, Brian was arrested for trying to buy peyote from what he thought was a lady of the night. It turned out that the undercover prostitute was the sister of the police chief, Ramon Gonzalez. Once Brian got to prison, he had a choice to make: train roosters for the ever-popular cock fighting competitions, or learn how to cook. He chose cock fighting but soon changed to cooking after his favorite rooster, Gilbert, almost pecked his left eye right out of his socket during a fight over a pork molé burrito.
Brian wondered how pork could be delicious enough to make Gilbert fight his own friend. So Brian sought out the Tijuana Correctional Facility’s top chef, Enrique “Habañero” Gustav. Enrique took Brian under his wing and taught him the ins and outs of Mexican Cuisine. The two became inseparable… literally (they had been a part of the same chain gang). After years of dreaming about opening their own restaurant, Brian and Enrique tunneled their way out of prison using a shovel they fashioned out of a pair of maracas.
Due to poor planning, they overshot their destination of San Antonio, TX and wound up in Arkansas. Arkansas was not quite ready for the “Burrito Explosion” led by the convict duo. After much debate, they settled on moving to New Jersey to fulfill their dream. Unfortunately, Enrique was shot and killed on Halloween when he decided to don a black bear costume. Brian decided to keep the dream alive and open a restaurant of his own, but still carry on the tradition of this fallen brother, Enrique – Great, fresh food. Brian also kept true to Enrique’s philosophy about customers, “#^*& ‘em! They ain’t always right, but give ‘em good food, esse!” LONG LIVE ENRIQUE!
