Why
is Boston called Beantown?
Boston’s nickname comes from what was once a thriving business, and dinnertime side dish: Boston baked beans. Historically, baked beans became popular in colonial times when Boston was a hub for sugar cane shipments from the Caribbean. Molasses was produced from the cane and inventive Bostonians quickly discovered that adding molasses was a cheap and easy way to make beans a little more satisfying. Today, original Boston baked beans are something of a rarity: There are no companies that make them and few restaurants that serve them. In the 1930’s, the Ferrara Pan Candy Company made sugar coated peanut replicas of the famed beans and as a result, the name lives on.
Even Mayor Menino thinks BeanTown is GreenTown!
During the State of the City Address on January 15, 2008, the Honorable Mayor Thomas M. Menino said “we really are turning Beantown into Greentown!” He was enthusiastically speaking about the launch of a greener Boston with initiatives like single stream recycling (cutting out the process of sorting between paper and plastic), an improved bicycling infrastructure for primary commuting lanes and an overall focus on environmental sustainability. In his speech, Mayor Menino reminded us: “sustainability is about making Boston’s future even brighter than its present!”

Green Fact of the Week! Know- and use- your benefits: Some companies offer incentives for going green at home and on the job. For example, household and personal-care products manufacturer Seventh Generation of Burlington, Vermont, for example, offers employees $5000 towards purchasing a hybrid car, another $5000 towards energy-efficient home improvements, and $500 for installing upgraded appliances.

Garden at the Cellar is a gastropub that pays homage to the bounty of the garden. Chef Will Gilson’s culinary focus is European and he draws influence from the seasons of New England and its local produce. The concept stems from the years Chef Will spent on his family farm, The Herb Lyceum, and an urge to create a menu with a fun take on seasonal comfort food that complements the assortment of beers and wines offered in the Cambridge landmark pub, The Cellar. What’s more is that the prices allow this cozy spot to be a weekly ritual.
Why GreenTown?
All of the herbs and plants inside The Garden’s dining room are from Chef Gilson’s network of farmer friends and his family. The menu boasts seasonal produce, locally sourced cheeses and seafood, and sustainably raised meats when available, so preparations change often. This diversity of top quality ingredients means diners enjoy varied taste experiences and support local purveyors, which come first and foremost in this chef’s philosophy.Visit Garden at the Cellar for more information. 991 Massachusetts Ave, Cambridge MA - 617.230.5880
Since 1945, Irving House has attracted travelers to historic Harvard Square with its affordable rates and priceless location. The large guesthouse boasts modern conveniences in a comforting ambiance right in the heart of Cambridge.
Why GreenTown?
Irving House buys its breakfast and snack items locally, so that guests may enjoy the utmost quality while simultaneously supporting local businesses. Look for fair trade and organic coffee and teas and locally-made breads, jams and cheeses. Shampoos, soaps, and lotions are provided by eco-friendly companies and are available to guests in dispensers to avoid the small packaging of individual bottles. Irving House recycles, donates old home furnishings to charity, composts food waste and uses energy-saving light bulbs. In 2006, Irving House was awarded the EPA’s Energy Star Label. Recently, more energy saving improvements were made to the heating and hot water system.
