Moondog. His New York recordings during the 1950's have such an amazing atmosphere often sounding as if they were recorded on the streets where he busked.
Steve Reich. Particularly his early stuff where he was using tape loops and percussion to get hypnotic evolving loops.

Eastern music that you might hear down a darkened alley in Cairo or Pingyao.
