Flour tortilla,black beans, rice, onions, green peppers, smothered in homemade enchilada sauce and baked. served with whole grain tortilla chips and homemade salsa.

Lentil Spaghetti w/ Garlic Toast and a Side Salad*

Sauce made with lentils, onions, green peppers served over spaghetti noodles with a side salad and garlic toast.

Hot and Sour Noodles w/ Asian Eggplants*

Rice noodles and asian eggplants smothered in a hot and sour sauce

Blackened Tofu Salad*

Blackened tofu served on a bed of fresh baby spinach, chopped tomatoes, cilantro and a homemade lemon dressing.

Eggplant Parmesan w/ Angel Hair Pasta

Eggplants coated in parmesan cheese and fried then baked in a cheesy tomato sauce served with angel hair pasta and garlic toast.

Butternut Vindaloo Bisque w/ Hummus and Pita*

Special bisque made from butternut squash and potatoes purred with coconut milk and spicy vindaloo seasoning. served with homemade hummus and pita.

Three Bean Enchilada Chili*

Pinto beans, kidney beans, black beans, tomatoes, onions and green peppers cooked in a homemade enchilada chili sauce and served with crackers.

Spicy Cucumber Salad*

cucumbers sliced along with red onions and jalapenos soaked in a vinaigrette then tossed with cilantro and chopped peanuts.
