    ..I love all types of music ... anything from Top 40 to country to R&B to almost anything.
  • Movies

    ..I love movies ... everything from action adventure to political thrillers (I feel so smart when I actually understand what's going on) to comedy to chick flicks to dramas. I like a good horror movie, but I have to watch it in the comfort of my home so I can fast forward through the suspenseful and scary parts.
  • Television

    ..Current TV programming includes Brothers and Sisters, How I Met Your Mother, Gilmore Girls, Lost, Ugly Betty, Grey's Anatomy, My Name is Earl, The Office, and Scrubs.

    All-time favorite TV programming includes Deadwood, Sex and the City, Friends, Firefly, Greg the Bunny, and Arrested Development.

  • Books

    I like a good mystery novel ... one that makes me want to jump to the end of the book to figure out who did it. I like to read "chick lit" books that will entertain me. I don't want to know who the heroine is going to fall for just by reading the summary. I want a good storyline and strong, flawed, and realistic characters.

About me:

Jennifer Elliott completed her first novel VODKA FOUR, which is in the process of being published (yah!). VODKA FOUR focuses on one (Heather) of five friends who live in the great state of Wisconsin. The book is scheduled to be released Dec. 2. Jennifer is currently working on the second book in the series, A THOUSAND YELLOW DAISIES (tentative release date December 2009).

Jennifer has the rest of the series mapped out in her mind ... it's just a matter of time of her sitting her butt down at the computer and writing fantastic and inspiring "chick lit." What Jennifer does to avoid writing is watching her favorite TV shows, renting movies, shopping for things she does not need, calling her friends and sisters, and working on other hobbies that really don't need her attention (scrapbooking and crocheting).

Jennifer lives in the great state of Wisconsin, but please don't mistake her for a Green Bay Packers fan ... because she's not. Although she lives in Wisconsin, she grew up in Minnesota and therefore is a loyal Minnesota Vikings fan (she doesn't care about the Brett Favre saga). Jennifer believes she can be a fan even when she can't name any players on the team. That also holds true for the St. Louis Cardinals ... she will always be a loyal and dedicated fan as she grew up loving the Cardinals. To this day, Tony Pena will always be her favorite baseball player of all time.

      HAVE A WONDERFUL REST OF THE WEEK... 

      HERE IS A LITTLE SOMETHING FOR YOU TO TRY IF YOU WISH, I THINK THEY ARE AWESOME!

      STUFFED GREEN OR RED PEPPERS

      Spray your crock pot with non stick spray... and add:
      5 cups of water (you can use chicken stock)
      5 tsp. low or no sodium chicken base
      1 cup of chopped celery
      1 cup of chopped onion
      1 1/2 cups of chopped carrots
      4 oz. can of sliced mushrooms
      2 tsp. sweet basil
      2 tbsp. minced garlic
      1 tsp. salt
      3/4 tsp. cracked pepper
      1 1/2 cups of brown basmati rice
      3/4 cup of barley (not quick cooking)
      1 cup of bacon bits... like Hormel real bacon bits

      Place lid on crock pot and cook on high for 3-4 hours or on low for 6-8 hours. When done cooking, mixture will be quite sticky... take lid off and let it cool down somewhat. Add the cheddar cheese and mix well... Next:

      Wash 4-6 green or red peppers, cut lengthwise, stem removed and seeds discarded.
      1 to 1 1/2 cups shredded cheddar cheese
      2 cups mild salsa or picante sauce
      1/3 cup ketchup
      1 1/2 cups of shredded mozzarella cheese

      In sprayed baking dish or on cookie sheet, arrange halved peppers. Fill each pepper generously with rice mixture. Mix the salsa with the catsup and spoon evenly over each green pepper. Bake uncovered in a 400 degree oven for thirty to forty minutes... remove from oven and top with mozzarella cheese and return to the oven until cheese is melted. Serve immediately!

      SOFT AND CHEWY PEANUT BUTTER COOKIES...

      INGREDIENTS:

      2 cups flour
      1/2 teaspoon baking soda
      1/2 teaspoon salt
      1 1/4 cup packed brown sugar
      1 1/4 cup white sugar
      1 cup of butter, room temperature
      3 eggs
      1 cup of creamy or chunky peanut butter
      2 teaspoons good vanilla

      DIRECTIONS:

      Preheat oven to 300 degrees

      In a medium bowl, combine flour, soda and salt.  Mix well with a wire whisk and set aside.

      In a large bowl, blend sugars, using an electric mixer set at medium speed.  Add butter, and mix to form a grainy paste, scraping the sides of the bowl.  Add eggs, peanut butter and vanilla and mix at medium speed until light and fluffy.

      Add the flour mixture and mix at low speed until just mixed.  Do not over mix.

      Drop by rounded spoonfuls onto an ungreased cookie sheet.  With a wet fork gently press into a crisscross pattern.  Sprinkle with sugar and bake for 18-22 minutes or until slightly brown along edges.  Enjoy!

      JUST STOPPING BY TO SAY GOODNIGHT TO MY SPECIAL FRIENDS!  HERE IS A RECIPE FOR YOU TO TRY IF YOU WISH...

      A RECIPE FOR YOU:  WHITE BEAN CHILI

      1 pound dried navy beans
      5 cups chicken stock
      1/2 stick butter
      1 tablespoon minced garlic
      3/4 cup diced onion
      1 1/2 cups chopped green chiles (fresh or canned)
      1 pound boneless, skinless chicken breasts, diced
      1 tablespoon ground cumin
      1 tablespoon dried oregano
      1 teaspoon ground black pepper
      1/2 teaspoon white pepper
      Pinch red pepper flakes
      1/2 bunch cilantro leaves, chopped

      Rinse beans well, cover with cool water and soak for 2 hours. Drain.  Place beans in large pot with chicken stock and bring to the boil over high heat.  In saucepan, heat butter over medium heat.  Add garlic, onion and chiles and saute for 5 minutes.  Add chile mixture to pot with beans.   Add chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro.  Lower heat to medium and cook, stirring occasionally for approximately 1 1/2 hours.  Serve with cornbread if desired.... ummmmm!
