I have been influenced by almost everyone who I ever heard playing the guitar, for better or worse. Some stuff I hear is so bad it influences me simply by being annoying... other stuff is so amazing it is humbling. If I had to make a list it would be very long and tough to compile, but Jeff Beck would be at the top of it. Buddy Guy, Jimi Hendrix, Jimmy Page, Carlos Santana, Hubert Sumlin, Albert King, BB King, George Harrison, Frank Zappa, Charlie Christian, Lenny Breau, Duane Allman... did I mention Jeff Beck? He would be on the list more than once. Other than guitarists, I love Louis Armstrong, both for his singing and his horn chops. Miles Davis and John Coltrane are right up there. Ella Fitzgerald. Bob Marley. Flo and Eddy.
