Pork Chops with Apples
Serves 4
You will need;
25g (1oz)Butter or block margarine
2 large apples, cored and cut into wedges
1tbsp granulated sugar
4 boneless loin chops, about 100g (4oz) each
1 tbsp olive oil
225ml (8fl oz)dry cider
1/2tsp dried rosmary
1/4tsp salt
black pepper
1/8tsp ground nutmeg
Method:
1. In a large non-stick frying pan melt butter/margarine over a medium heat. Add apple wedges and cook, stiring frequently, for 3mins, or until tender. Add sugar. Cook for 2mins or until golden. Remove from heat. (DO NOT leave the pan unattended while melting the sugar)
2. Using a sharp knife, trim any excess fat fron the chops. Cut a deep, horizontal pocket in each one. Spoon the apple into each pocket, secure the openings with cocktail sticks.
3. Clean and dry the frying pan. Heat the oil ove a medium-high heat. Add pork chops to the pan. Cook for 2mins on each side, or until browned.
4. Add cider, rosemary,seasoning and nutmeg to the pan. Simmer over a low heat for about 25mins, or until chops are fully cooked turning chops occasionally.
5. To serve, remove cocktail sticks and drizzle pan juices over the chops. Serve with crisp roast potatoes and fresh carrots
To save time, don't cut the chops and cook untill done. Serve the apple mixture on the side.
