I do it all with my midi controller and Garageband, and some sample manipulation in a free program called Audacity. It's pretty crude, but it's cheap and I can get it to relatively do what I want it to do.
I'm gonna try to come out to All Asia sometime and hang out, sounds like it would be fun.
