Spinach Walnut Pesto with Smoked Tofu & Whole Wheat Rotini
makes about 1 1/2 cups, serves 2-3 when with pasta
3 cups fresh spinach 3 cloves garlic 1/2 teaspoon salt 1 cup firmly packed fresh parsley leaves 1/3 cup walnut pieces 1 tbsp freeze dried basil 2 tbsp ground flax seed 1/3 cup extra-virgin olive oil or walnut oil
1 block of smoked tofu (about 8 oz)
Cook your favourite whole wheat pasta (I'm sorry I can't remember how much I cooked, but if you have leftover you can make pasta salad?).
Meanwhile, steam the spinach over boiling water for 1 minute, or wilt it in a covered bowl in the microwave for about 3 minutes. Mince the garlic with the salt in a food processor. Squeeze any moisture from the spinach and add to the food processor along with the parsley, basil, flax seeds and walnuts. Puree until smooth. Add the olive oil gradually and process to a smooth paste.
Cut up smoked tofu into squares or small strips. In the pot that you cooked the pasta in, add the pesto and the tofu. Heat over low until tofu is hot.
Espresso Chocolate Chip Cake (makes 6 mini loaves)
Wet Ingredients: 6 oz vanilla soy yogurt (or plain) 1 cup canola oil 1 tbsp vanilla extract 1 tbsp chocolate extract (or more vanilla) 2 cups sugar 2 tbsp molasses 1/2 cup coffee flavored liquour 1 cup soymilk (vanilla or plain) 1/2 cup instant coffee crystals
Dry Ingredients: 3 1/2 cups all purpose flour 1 cup whole wheat pastry flour 1/2 cup cocoa powder 2 tsp baking powder 2 tsp baking soda 2 tbsp cornstarch 1 tsp salt 1 1/2 cups chocolate chips
Directions Preheat oven to 350. In a large bowl, mix together all wet ingredients. In a seperate bowl sift together all dry ingredients, except chocolate chips. Add dry to wet, mix well. Fold in chocolate chips. Fill mini loaf tins 2/3 full. Bake at 350 for 30-45 minutes, or until a toothpick inserted into the center comes out clean.
Kale and Sundried Tomato Hummus Makes approx. 1 1/2 cups
1 Can Chickpeas, rinsed and drained 2 Tbs Tahini 1/2 tsp Salt 2 Tbs Olive Oil 1/4 Cup Water 1/4 Cup Sundried Tomatoes (about 5) 1 Small Head Kale, de-veined and steamed Fresh Cracked Black Pepper Fresh herbs (Optional, I used oregano)
Kale, steamed and squeezedRinse chickpeas and place into food processor. Add salt, tahini, water, oil and blend until very smooth.
Remove and discard tough stems from kale with scissors. Steam until tender and bright green, shock under cool water, then squeeze as much water out as possible (see photo to the left). Break kale ball apart and place in processor with sundried tomatoes. Gently pulse until ingredients are well combined, but you can still see chunks of kale and tomatoes. Serve immediately or refrigerate.
For a light lunch, snack or appetizer, grill or toast some high quality bread and spread with hummus. Top with freshly cracked black pepper and fresh herbs of your choice, if available.

Sinus-clearing vegan chili Servings: a whole bunch (probably 8)
1 pouch Boca crumbles 1 can black beans 1 can kidney beans 1 can whole peeled tomatoes (mush them up) 1/2 jar spaghetti sauce 1 bell pepper 1 onion 10 cloves garlic (seriously, I did) 1.5 cups frozen mixed veggies 2 big jalapeno peppers, chopped lots of spices (I used oregano, parsley, chili powder, garlic powder, rosemary, basil, curry powder)
Combine all that in a big pot over medium heat and stir every few minutes until the onions & peppers are as tender as you like em. Serve up hot! This would be good over rice with vegan sour cream topping
