I would STRONGLY advise against this method. The aspartame in Equal does not take kindly to the anethol in anise. It is natural sweetener vs. artificial sweetener, and the results are not pretty. Also, pouring absinthe on top of water makes for a poor mixture, as not all of the essential oils will be released this way and it will taste strange and unbalanced. It may look cool, but chances are people won't order it again, no matter what brand you're serving. Any sincere absinthe enthusiast that saw this preparation would be horrified, though not quite to the degree of seeing absinthe being roasted.
You could always position the fountain in a spot where people can louche their own. Otherwise, ask them their water ratio, but give an option for those unsure (ie: "Is 3 parts water ok?"). Low ABV like Obsello should be 3:1 and higher (65%+) 4:1 as a rule of thumb. There are exceptions and some 68% brands are best at 3:1, etc of course, but offer these ratios as choices if the customer doesn't specify their own ratio. A super slow drip like you see in those Youtube videos is not needed. A 60-90 second louche will do. One more thing: don't offer sugar unless they specifically ask. Experts largely drink it without to experience the improved complexity, and others may find it too sweet and mistake it for a liqueur.

You've NEVER seen me smoke, just to smoke! Ever! I'm always EXTREMELY intoxicated if I smoke. And I certainly don't follow food with a smoke! THAT sounds disgusting to me!
