So what makes Xocai different from any other dark chocolate? The answer is processing. Hersheys, Godiva, Coca Via, and the rest may be dark chocolate but they lack the antioxidant benefits that raw unprocessed cocoa provides. While most companies roast the cocoa bean during processing, Xocai does not. Because antioxidants are extremely sensitive to heat the old school traditional processing is detrimental to antioxidant values in roasted cocoa. Xocai is the only dark chocolate that is tested by the USDA and has the ORAC (Oxygen Radical Absorbance Capacity) value stated right on the label.
