One of my big favorites comes straight out of Missouri City: BJ's Hi-tech Pepper Sauce, a sunny orange-hued bolt of mustardy lightning that has a wonderfully fresh uplift of flavor. I liked it better than any habanero sauce I've ever tasted, which made the steep price of $6 for a 5-ounce bottle a lot easier to take. The legendary habanero heat is brilliantly controlled, by the way, and you wouldn't believe how good the sauce is on a simple quesadilla. (Next I'm thinking chicken wings.)
BJ's brewmaster John Sherman, Jr. was on hand with several pals to dispense samples and talk his sauce up. He's got a myspace page and an email address, bjspepperco@hotmail.com, through which you can locate the sauce; or you can get it at Spec's at a considerable discount from the festival price. It could be just the thing to fill a lot of local Christmas stockings.
